Pop Up Groundhog Cookies

The little cuties are similiar to "No-Bake Cookies" that are made out of rolled oats, sugar, butter, peanut butter and cocoa shaped around a hollow plastic dowel that is removed after cooled.

The groundhog part is made out of a tootsie roll shaped to look more like the critter and decorated with edible frosting then put inside a ""Stripes cookie", or similar cookie with a hole with center with a little frosting or chocolate on top and topped with the above mounds.

Groundhog Day Roundup




















Every year on February 2nd Punxsutawney, Pennsylvania  20,000 or more people gather for to see if  Punxsutawney Phil will see his shadow at sunrise    as folklore has it if he sees is shadow, there will be 6 more weeks of winter and if not there will be an early Spring.










The tradition was made even more popular after the 1993  movie "Groundhog Day" starring Bill Murray where he ended up in a time warp stuck reliving Groundhog Day every day.
